Not all Cincinnati Style recipes will call for chocolate, this is a pretty good one that does. Don't forget Cincinnati style chili served alone is Chili 1-way, chili with beans added is a 2-way, a 2-way over spaghetti is a 3-way, a 3-way topped with grated cheese or chopped onion is a 4-way, and a 4-way with BOTH grated cheese AND chopped onion is a 5-way. O.K.?

Ingredients

  • 1 lb. ground beef
  • 1 onion, finely chopped
  • 2 cups water
  • 1 8oz. can tomato sauce
  • 2 - 3 whole allspice
  • 2 garlic cloves
  • 2 Tbs. chili powder
  • 1 Tbs. cider vinegar
  • 1 bay leaf
  • 2 - 3 whole cloves
  • 1 tsp. Worcestershire sauce
  • < - =oz. unsweetened chocolate
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. cayenne
  • 1/2 tsp. ground cumin

Directions

Heat the meat and onion in water, stirring until the meat is completely separated. Simmer another 30 minutes. Add all the remaining ingredients. Simmer for about 3 hours, uncovering only for the last hour. Add water to adjust consistency if necessary.
