Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 3/4 tsp baking soda
- 1/4 salt
- 2 tbs unsalted butter, melted
- 2/3 dark brown sugar, firmly packed
- 1/3 cup smooth peanut butter
- 1 large egg, well beaten
- 1/4 cup roasted, unsalted peanuts
- 1/4 cup seedless raisins (come to think about it, is there such thing as seeded raisins? Who would eat that?)
- 1 cup buttermilk
Directions
1. Preheat oven to 350df.
2. Sift flour, baking powder, baking soda and salt together into a bowl.
3. In a large mixing bowl, combine melted butter, brown sugar, and peanut butter. Beat well with an electric mixer. Add the beaten egg, beating until smooth. Add one-third of the flour mixture, continuing to beat until smooth.
4. Stir in peanuts, raisins, and buttermilk. Add remaining flour mixture aned blend well with a wooden spoon.
5. Pour mixure into a grased and floured (bottom and sdies dusted with flour) 9 1/4 inch loaf pan. Bake 45 to 55 minutes, until loaf begins to separate from the edgges of the pan and a tester inserted into the center comes out clean.
