Ingredients:

  • 2 c. yellow cornmeal
  • 1 c. buttermilk
  • 1/2 c. oil
  • 1 c. cheddar cheese, cut up
  • 2 eggs
  • 2 or 3 small Mexican peppers, cut up
  • 1/2 t. baking soda
  • 1/2 t. salt
  • 1/2 t. garlic powder
  • 2 t. sugar
  • 1 c. cream-style corn

Directions:
Mix oil, sugar, beaten eggs, cornmeal, soda, salt and garlic powder. Add buttermilk, peppers, corn, cheddar cheese. Mix well.Bake in a loaf pan at 350 degrees until brown.
