Passover Apple Squares Recipe

1/2 teaspoon salt
1/2 cup peanut oil
1 cup matzo meal
1 lemon,juice and grated rind
3 eggs separated
2 large apples, pared and sliced
1 cup sugar-cinnamon mixed

Combine sugar, salt and matzo meal. Add egg yolks, oil ,juice and grated rind of lemon. Fold in stiffly beaten egg whites. Pour half of this batter into a greased 8x8 pan. Cover batter with thinly sliced apples. Sprinkle with remaining batter. Bake for 45 minutes in a 375 degree oven. Cool completely before cutting into squares.
