Ingredients

  • 3 cups flour
  • 1 1/2 cups sugar
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 2 cups shredded unpeeled zucchini (large holes on grater)
  • 1 cup chopped nuts
  • 1 cup raisins
  • 3 eggs
  • 1 cup vegetable oil

Directions

Stir together flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, nuts and raisins. In a bowl, beat eggs and oil. Pour over flour mixture. Stir until all moistened. Bake in a 5 x 9 loaf pan, in a 350 degree oven, for 1 hour and 30 minutes, or until pick comes out clean.
