This is a wonderful recipe to serve for company, either as a main dish or an hor dourve.

Ingredients

  • 5 to 10 #'s salmon
  • 2 Tbsp. melted butter
  • 2 cups white wine
  • 3 sprigs parsley
  • 1/2 tsp. thyme
  • salt & pepper

Directions

Lay salmon on a rack in fish poacher or roasting pan and pour in wine and butter. Lay parsley, thyme, salt and pepper on top of the fish and cover and bake at 350 degrees for approx. 40 min or until fish is done. Remove fish to a platter and remove the skin and debone fish. This is best done while the fish is still warm. Serve with a verde sauce which is made by placing in your food processor, 1 cup lossely packed spinach leaves, 3 sprigs fresh parsley, 1/2 cup watercress, 2 tbsp. lemon juice, 2 tbsp. green onions, dash of tabasco,1/2 tsp dry mustard, 1 tsp dried basil, 1 tsp anchovey paste, and process until thoroughly chopped, add 1 cup mayonaise and mix. Fold in 2 tbsp. capers. This sauce is delicious and a must.
