Swordfish Macademia Recipe

Ingredients:

  • 6- 8 oz Swordfish Fillets
  • 1/2 cup Macadamia nuts, chopped finely
  • 1 cup of corn flakes, crushed
  • 1 Tablespoon chopped fresh parsley
  • 1/4 cup Coconut Cream
  • 1 Tablespoon lemon juice fresh

Directions:
Wash and dry fish. Remove skin. Set aside. Combine nuts, corn flakes and parsley. Set aside.
Combine coconut cream and lemon juice. Dip fish mixture and coat with crumbs mixture. Place one inch apart on display tray.
Consumer will need to bake at 350* F about 25 minutes or until fish flakes and is done.

Date Relish
This chilled Date Relish is to be served over the top of the fish after it's been cooked.

3/4 of a cup of Fresh Pineapple chopped.
3/4 of a cup of Fresh Papaya, peeled and chopped.
1/2 of a cup of chopped fresh dates.
1 tablespoon of any grainy mustard.
Combine all ingredients, cover and refrigerate. Serve fish hot with date relish.
