Ingredients

  • raw fish in cubes (white meat fish preferably)
  • onions, chopped
  • chiles, chopped
  • lots of lime juice to cover
  • coriander leaves chopped
  • salt and pepper

Directions

If you are the nervous type you MAY want to rinse the surface of the fish cubes very fast with boiling water to kill surface bacteria DO NOT COOK!! The lime juice will do the "cooking"

Mix all ingredients making sure to cover the fish with lime juice and lots of choped onion
Season with salt and a little pepper
Let rest in the fridge for 6 hours before serving
The above is the basic preparation but....
In Peru, where I come from, they would add 2-3 cms thick slices of cooked sweet potatoes [if you are in the US,that is about 1 " but is time you get real and begin using the metric sytem]and also similar slices of boiled corn to sit in the juice
In Acapulco they would add instead finely chopped tomatoes and, in one very popular version, ketchup!
(too many US tourists I guess..but many Mexicans like my wife love it that way)


who cares? tastes great and has no fat other than the natural in the fish. Do not use oily fish
