Ingredients

  • 2 pork tenderloin (each about 3/4 lb.)
  • 2 tbsp. hoisin sauce
  • 1 cup applesauce
  • 1 tbsp. chopped fresh parsley
  • 1 tbsp. Dijon mustard

Directions

Place pork tenderloin on rack in baking dish with small end tucked under. Brush with hoisin sauce. Roast in 400 degree F oven for 40 minutes or until meat registers 160 to 170 degrees F and meat is no longer pink inside. Meanwhile, Blend applesauce,parsley and mustard to make dipping sauce.Slice meat into medallions and serve with Mustard dipping sauce.Makes 6-8 small servings.Per serving: about 135 calories
