• 2 chickens
  • 2 cups rice, long grain
  • 1 large onion
  • 2 tbps tomato paste
  • 1/2 cup pine nuts
  • salt and pepper to taste
  • 4 to 5 cardmom pods


Clean chickens and cut into serving pieces. Boil in water to which is added the cardomom and cut up onion. When chicken is almost tender, add tomato paste and simmer about 15 minutes. Remove chicken and drain. Add rice to sauce mixture, adding boiling water if necessary to cover rice. Cook covered on low fire until rice is tender. Saute pine nuts. Grill chicken until brown. Arrange cooked rice on platter with chicken pieces. Garnish with pine nuts
