Strawberry and Bannana Pie Recipe

Ingredients:

  • PASTRY PIE CRUST:
  • 1 cup all-purpose flour
  • 3/4 tsp. lite salt
  • 1/3 cup light corm syrup
  • 2 Tbs. skim milk
  • FILLING:
  • 1 pint fresh strawberries
  • 3/4 cup water
  • 1/2 cup sugar
  • 2 1/2 Tbs. cornstarch
  • 1 large banana or 2 small ones
  • Red food coloring
  • TOPPING:
  • 1 envelope Dream Whip Mix
  • 1/2 cup cold skim milk
  • 1 tsp. vanilla

Directions:
CRUST:

Spray a 9 inch pie pan with a non-fat cooking spray. Pre-heat oven to 475 degrees F. Mix ingredients until just moistened. Form into ball and roll out on a floured surface to fit into a pie pan. Don't over-work the dough, as this will cause it to be tough. Prick bottom of crust and bake at 475 degrees F, for 10 minutes or until golden brown.

PIE:

Wash, hull and slice strawberries in half. Place in a saucepan with the water and 1/2 tsp. red food coloring and bring to a boil. When it reaches a full boil, pour in sugar and cornstarch that have been mixed together. Stir until thickened and clear. Remove from heat and cool in refrigerator. When filling is cooled, slice banana and layer in bottom of baked, cooled pie crust. Pour strawberry filling over the bananas and return to refrigerator until time to serve. Top with one pkg. prepared Dream Whip
