Ingredients:

  • 2 cups milk
  • 2 cups water
  • 1 tsp. salt
  • 1 1/4 cup cornmeal
  • 1 1/4 cup water
  • 1 cup grated mozarella cheese(optional)

Directions:
Mix the water, milk, and salt together and bring to a boil. Meanwhile, mix the cornmeal and cup water together in a bowl. After water/milk mixture boils, slowly stir in the cornmeal mixture. Stiring almost constantly, bring to a boil, cover and let simmer for 20 minutes. Add cheese and mix well. As soon as cheese is melted, remove from heat and serve with marinara sauce. One variation I've tried is Polenta Lasagna. You chill the polenta for a couple hours, then slice it and substitue it into any lasanga recipe instead of the noodles. It's delicious that way.
