Ingredients

  • 1/2 Cup Flour
  • 1 Tablespoon sugar
  • 1 Teaspoon ground red pepper
  • 1/2 Teaspoon salt
  • 2 Eggs
  • 2 Tablespoons water
  • 2 1/2 Cups sweetened flaked coconut
  • 1 Pound LARGE Shrimp - tails left on
  • 2 Cups vegetable oil

Directions

Combine flour, sugar, red pepper, salt. Beat together eggs and water. Place coconut in shallow dish. Coat shrimp with flour, dip in egg, roll in coconut pressing firmly to coat both sides of shrimp. Heat the oil. Cook shrimp in batches until golden brown.
Drain on a paper towel. A good dipping is made with plain yogurt and pina colada mixer.
