Ingredients

  • 2 lb Russet potatoes; cooked, peeled and shredded
  • 1-1/2 c Sour cream
  • 1-1/2 c Swiss cheese; shredded
  • 1 md Carrot, shredded
  • 1/4 c Minced onion
  • 2 tb Minced parsley
  • 1 ts Salt
  • 1/2 ts Dill weed
  • Dash pepper
  • Paprika to taste

Directions

Combine all ingredients except 1/2 cup Swiss cheese and paprika. Turn into buttered 1-1/2 quart casserole; sprinkle with remaining cheese and paprika. Bake in a preheated 350 oven 30-40 minutes.
