Zucchini Muffins with lemon Recipe

Ingredients:

  • 2 c. unbleached flour
  • 1/2 c. brown sugar
  • 1 T. baking powder
  • 1/2 t. ground cinnamon
  • 1/2 t. salt
  • 3/4 c. skim milk
  • 3 T. canola oil
  • 1 egg
  • 2 t. grated lemon peel
  • 1 c. shredded zucchini

Directions:
Heat oven to 375 degrees. Coat 12 muffin cups with nonstick spray. In a bowl, whisk flour, sugar, baking powder, cinnamon & salt. In another bowl, whisk milk, oil, egg & peel. Stir in zucchini. Add zucchini mixture to dry ingredients and stir just until moistened. Divide batter among muffin cups.

Bake until a toothpick inserted into center of a muffin comes out clean, about 22 minutes. Remove muffins from pan. Cool on a wire rack.

Per Muffin: 149 calories, 4.1 g.fat (25% of calories), 18 mg. cholesterol, 143mg. sodium, 0.7g dietary fiber
