Heat oven to 375 degrees. Coat 12 muffin cups with nonstick spray. In a bowl, whisk flour, sugar, baking powder, cinnamon & salt. In another bowl, whisk milk, oil, egg & peel. Stir in zucchini. Add zucchini mixture to dry ingredients and stir just until moistened. Divide batter among muffin cups. Bake until a toothpick inserted into center of a muffin comes out clean, about 22 minutes. Remove muffins from pan. Cool on a wire rack. Per Muffin: 149 calories, 4.1 g.fat (25% of calories), 18 mg. cholesterol, 143mg. sodium, 0.7g dietary fiber
