Ingredients
- 2 Tablespoons olive oil
- 6 Tablespoons peanut oil
- 1/4 cup tarragon vinegar
- 1 1/4 teaspoons grated orange rind
- 1 1/2 teaspoons sugar
- 1/2 teaspoon dried tarragon
- 1/4 teaspoon garlic salt
- 1/8 teaspoon pepper
- dash Tabasco
- 2 medium heads Romaine lettuce (about 6 cups torn)
- 1 large red onion, sliced thinly
- 1 can (11 ounces) mandarin oranges, drained
- 1 avocado, sliced
- 1/2 cup slivered almonds
Directions
In a small bowl whisk together oils, vinegar, orange rind, sugar, tarragon, garlic salt, pepper and enough Tabasco to give the dressing a clean edge. Cover and chill for 30 minutes or more, to let the flavor develop. Mix Romaine, onion, mandarin oranges and avocado in a large salad bowl. Just before serving, give the dressing a good stir and toss it well with the salad. Sprinkle with almonds.
