The Peanut butter in the dressing is the secret. Now doesn't this Asian Coleslaw give KFC Coleslaw a run for its money??

Ingredients

  • 1/4 cup and 2 Tbs. rice wine vinegar
  • 1/4 cup and 2 Tbs. vegetable oil
  • 1/4 cup and 1 Tbs. smooth peanut butter
  • 3 Tbs. soy sauce
  • 3 Tbs. brown sugar
  • 2 Tbs. minced fresh ginger root
  • 1 Tbs. and 1-1/2 tsps. minced garlic
  • 5 cups sliced cabbage
  • 2 cups Napa cabbage
  • 2 cups thinly sliced red cabbage
  • 2 red bell peppers, thinly sliced
  • 2 carrots, julienned
  • 6 green onions, chopped
  • 1/2 cup chopped fresh cilantro

Directions

Prepare the dressing by whisking together the rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic. In a large bowl, combine the green cabbage, red cabbage, Napa cabbage, bell peppers, carrots, green onions and cilentro. Add dressing, toss and serve. Season with salt and pepper and or sesame seeds to taste.


Makes 8 to 10 generous servings
