This is one of the very special recipes that my dear grandmother used to make. If you don't have any chicken fat, then you can use crisco shortening, but it won't be as flavorful.

Ingredients

  • 6 medium potatoes
  • 2 beaten eggs
  • 1/2 tsp grated onion
  • 2 TBS. matzo meal
  • 4 TBS. chicken fat
  • 1/2 tsp. salt
  • dash pepper

Directions

Grate the raw potatoes into water, other wise they will turn brown. Completely drain the water from the potatoes. Add the eggs, salt, pepper and matzo meal to the potatoes (grated onion can also be added). Melt 2 Tbs. chicken fat and add to the potatoes. Put 2 TBS. of chicken fat into a 9 X 14 gaking pan. Put the baking pan into the oven until it is hot and the chicken fat is melted. Pour the potato mixutre into the hot pan and bake for 1 hour at 350.
