Ingredients

  • 4 large eggs
  • 1 cup sugar
  • 1 stick butter, melted
  • 1 teaspoon vanilla
  • 3 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 3 oz. package whole almonds

Directions

Melt butter. Beat eggs (4 eggs less two egg whites). Add sugar, vanilla, melted butter. Add flour, work dough. Add whole almonds and work dough lightly. Roll dough into log, divide in four equal portions and roll into log shape again (approx. 12 inches long). Place two logs on each lightly greased cookie sheet. Bake at 350 degrees for about 25 minutes or until lightly browned. While still warm, cut on slant. Place on cookie sheet, cut ends up and bake additional 10 minutes. Remove from oven and cool. Store in airtight container.
