This is the only recipe I could find. I don't know if it tastes like Campbell's or not, but I have been pretty happy with most of the recipe's I've tried from this book. Good luck.

Ingredients

  • 1/3 cup minced yellow onion
  • 2 TBS butter or margarine
  • 2 TBS flour
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1-1/4 tsp salt
  • 1/8 tsp pepper
  • 1 TBS tomato paste
  • 1 TBS light brown sugar
  • 1 (10-1/2-oz.) can condensed beef consomme'
  • 1 cup milk
  • 1 (1-lb 12 oz.) can of tomatoes (DO NOT DRAIN)

Directions

Stir-fry onion in butter in a large heavy saucepan 3-5 minutes until limp, blend in flour, herbs, salt and pepper, then stir in tomato paste, light brown sugar, consomme', and milk, then heat, stirring constantly, until thickened and smooth. Put tomatoes through a food mill or puree', a little at a time, in an electric blender at low speed; add to pan and simmer, uncovered, 12-15 minutes--DO NOT ALLOW TO BOIL. Ladle into soup bowls and serve piping hot.


Makes 6 servings. About 130 calories per serving.
