Ingredients

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 cup peanut butter
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 cup flaked coconut

Directions

1 Preheat oven to 375 degrees F (190 degrees C).
2 Cream butter until fluffy. Add sugar gradually, mixing until creamy. Beat in unbeaten eggs, one at a time and mix well. Add peanut butter and blend well. Measure flour, soda and salt onto waxed paper and stir thoroughly to blend. Add to peanut butter mixture. Mix thoroughly. Mix in coconut.
3 Drop by the teaspoonfulls onto ungreased baking sheets. Press flat with floured fork. Bake for 12 to 15 minutes.
