Lemon Meringue Pie Recipe

Ingredients:

  • Makes 1 pie
  • 8 Tbsp. butter
  • 1 cup sugar
  • 1/4 tsp. salt
  • 2 egg yolks
  • 2 cups milk
  • juice of 1 lemon
  • 1/2 rind of lemon, grated
  • 1 pie shell, baked
  • Meringue
  • 2 Tbsp. confectioner's sugar
  • 2 egg whites

Directions:
Melt butter. Mix flour, sugar, and salt. Add butter to dry mixture. Beat egg yolks and add milk. Gradually add flour mixture. Cook in heavy kettle or over hot water, stirring constantly until quite thick. Remove from heat. Add lemon juice and rind. Mix well. Pour into baked pie shell. Cover with meringue and bake at 325 degrees F until a delicate brown, about 15 minutes.
