• Melba Sauce:
  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 1/3 cup orange juice
  • 1 1/2 cups fresh raspberries, or 1 10-ounce package frozen raspberries, thawed
  • 3 fresh Georgia peaches
  • 1 quart non-fat frozen vanilla yogurt


Combine sugar, cornstarch and orange juice in a small saucepan over medium heat. Stir mixture until it becomes thick and bubbly. Add raspberries and heat until warm. Remove sauce from heat and set aside. Cut fresh peaches in half and remove pits. Place each half in glass dessert dish. Place a scoop of non-fat vanilla yogurt in each half (about 1/4 cup). Top with Melba Sauce and serve immediately.

Serves 6. Per serving: 137 calories; 1.7 g protein; 33 g carbohydrates; 0.3 g fat; 5 mg cholesterol; 45 mg sodium; 2.8 g fiber; 11 mg calcium; 0.3 mg iron.
