A very good cake to freeze and frosting freezes well too.

Ingredients

  • CAKE
  • 1 1/2 cups sugar
  • 2 beaten eggs
  • 1/2 cup oil
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 6 cups diced raw apples
  • 1 cup chopped nuts

Directions

Cream sugar and eggs, add oil and mix well. Mix all dry ingredients together and add to cream mixture alternately with apples. Add nuts and pour in large oblong pan which has been greased. Bake for 55 or 60 minutes at 350 degrees.

FROSTING
1 1/2 cups powdered sugar, sifted
3 tablespoons butter
6 ounces cream cheese
1/2 teaspoon vanilla

Mix together all ingredients and spread on cooled cake.
