Don't laugh! It's been a favorite with all but the biggest snobs for a long time, despite the source. Texture is not as thick/standalone as a silk pie, but more of a thick custard.

Ingredients

  • 1 cup sugar
  • 3 T cornstarch
  • 1/4 tsp salt
  • 2 cups milk (whole)
  • 3 slightly beaten egg yolks
  • 2 Tablespoons butter
  • 2 one-oz squares unsweetened chocolate
  • 1 teaspoon vanilla
  • 1 9-inch baked pastry shell

Directions

Combine sugar, cornstarch and salt, mix to get out lumps. Gradually stir in milk and add chopped chocolate. Cook and stir over medium high heat till bubbly. Cook and stir 2 minutes. Remove from heat. Sitr a moderate amount hot mixture into yolks; immediately return to hot mixture; cook 2 minutes, stirring constantly. Remove from heat. Add butter and vanilla. Pour into cooled baked pastry shell. bake at 350 degrees for 12 to 15 minutes. Chill with wax paper on surface. Serve with whipped cream.
