Ingredients
- 1 cup mayonnaise
- 4 hard-boiled eggs, finely chopped
- 1 teaspoon dry mustard
- 2 tablespoons finely chopped parsley
- 1 tablespoon finely chopped green pepper
- 1 teaspoon finely chopped garlic
- 1 tablespoon anchovy paste
- 1 teaspoon Worcestershire sauce
- 6 finely chopped olives
- White pepper
- 1 tablespoon finely chopped gherkins
- 1 tablespoon finely chopped capers
- 1 tablespoon finely chopped chervil
- 1 tablespoon finely chopped tarragon
Directions
In a mixing bowl combine the mayonnaise and eggs, and thoroughly blend by hand. Mix in the dry mustard, parsley , green pepper, garlic, anchovy paste, Worcestershire sauce, olives, and white pepper to taste. Add the gherkins, capers, chervil, and tarragon. Add more white pepper, to taste, if necessary.
Makes about 1 1/2 cups.
