Ingredients:

3 medium fresh sweet potatoes
1 apple, cored and diced
1/2 cup chopped pecans
1/2 cup sour cream
1/2 cup mayonnaise
1 tsp. fresh lemon peel, grated
2 tbsp. fresh lemon juice
2-1/2 tbsp. honey
1/2 tsp. salt
1/8 tsp. black pepper
1/4 tsp. tarragon

Directions:

In medium bowl, combine shredded sweet potatoes with apple and nuts. In small bowl, combine remaining ingredients. Mix well. Add dressing to sweet potato mixture. Blend thoroughly. Chill.
Hint: Substitute 1 cup shredded jicama for 1 cup sweet potatoes.

Makes 8 servings.
