Ingredients:

  • 4 thick pork chops with pockets
  • 1/4 tsp. crushed rosemary
  • 1/4 tsp. each thyme, garlic powder, and black pepper
  • 1/8 tsp. salt
  • 1 egg
  • 1/2 cup seasoned bread crumbs
  • Oil for frying

Directions:
Rinse pork chops and pat dry with a paper towel. Combine all the herbs with black pepper and salt. Spread mixture in the pockets of the chops. Break egg into a shallow plate such as a pie pan, and beat lightly with a fork. Dip chops in egg, then in bread crumbs. To cook, brown chops in hot oil on both sides; place on a spray coated baking pan and bake in oven preheated to 375 degrees for 30 minutes. Do not cover or add water. Pork chops go well with baked yams.
