Ingredients

  • 7 pounds pork ribs
  • 1 1/2 cups white sugar
  • 1/4 cup salt
  • 2 1/2 tablespoons ground black pepper
  • 3 tablespoons paprika
  • cayenne pepper to taste
  • 2 tablespoons garlic powder
  • 5 tablespoons roasting pan drippings from the ribs
  • 1/2 cup chopped onion
  • 4 cups ketchup
  • 3 cups hot water
  • 4 tablespoons brown sugar
  • cayenne pepper to taste
  • salt and pepper to taste

Directions

1 Clean the ribs and trim any excess fat. In a medium bowl, combine the sugar, salt, ground black pepper, paprika, cayenne pepper and garlic powder. Mix well and coat liberally over the ribs. Cover and refrigerate for at least 8 hours.

2 Preheat oven to 275 degrees F (135 degrees C).

3 Place the ribs in some 10x15 inch roasting pans, piling two racks of ribs per pan.

4 Bake at 275 degrees F (135 degrees C) for 3 to 4 hours, or until the ribs are tender and nearly fall apart. (Note: This may take longer depending on the cut of the ribs.)

5 For the sauce: Take 5 tablespoons of drippings from the bottom of the roasting pans and place them in a large saucepan. Over medium heat on the stove, add the onion and saute in the drippings for 5 to 10 minutes, or until lightly browned and tender. Add the ketchup and heat for 3 to 4 more minutes, stirring constantly. Next, add the water, brown sugar, cayenne pepper to taste and salt and pepper to taste. Reduce heat to low, cover and simmer for 1 hour, adding water as necessary. Simmer to desired sauce thickness.

6 Prepare an outdoor grill for medium low heat and lightly oil grate.

7 When ribs are done and out of the oven, transfer them to the grill and cook for 10 minutes per side, basting with the sauce during the last 10 minutes of grilling. (Note: Do not baste the ribs as soon as you put them on the grill or the sauce will make them burn.)
