Ingredients:

  • 2 envelopes unflavored gelatin
  • 1/2 cup water
  • 3/4 cup sugar
  • 1 1/2 cups boiling water
  • 1/2 tsp grated lime peel
  • 1/2 cup lime juice
  • 4 egg whites

Directions:
Sprinkle unflavored gelatin over cold water in a large bowl and let stand 5 minutes. Stir in sugar until blended. Add boiling water and stir until gelatin is completely dissolved, about 3 minutes. Add grated lime peel and lime juice. Chill until slightly thickened(about 15 min)
Beat egg whites until stiff. While beating, gradually add gelatin mixture until soft peaks form. Spoon into 8 individual dessert cups or 1 large serving bowl. Chill for 2 hours.

Serves 8 2 Tbs.=64 calories-3 g protein, 0 g fat, 14 g carbohydrate, 0 mg cholesterol


Nice with mint leaves whole berries or edible flowers.
