Sauti the garlic, ginger and onion in oil until tender. Add all remaining ingredients except rice and simmer uncovered for 20 minutes. Add rice and adjust seasoning to your own taste. Enjoy as a side dish or main meal. Note: If you have a favorite curry powder, then substitute for the turmeric and cumin. Makes 6 Servings. Nutrition info: 85 calories ~ 5 grams protein ~ 3 grams fat ~ 10 grams carbohydrates ~ 2 grams fiber.
