Ingredients:
  • 9 inch partially baked pastry shell.
  • 2Tbs minced green onion
  • 1Tbs butter
  • 1 can (7ounces) well drained crab.
  • 1Tbs flour
  • 1-1/2 cup shredded swiss cheese
  • 3 eggs
  • 1 cup light cream
  • dash of salt-pepper and nutmeg

Directions:
Saute onions in butter until tender, about 2 minutes.Mix crab and flour and set aside. Sprinkle half the cheese in the pie shell, then spread with the crab mixture. Sprinkle the rest of the cheese. Beat the eggs, cream, salt, pepper and nutmeg. Pour into shell. Bake at 350 for 30 to 40 minutes or until the center is set. This is quite an elegant quiche that can be served for luncheon or supper. I always add sugared grapes on the plate for a nice touch .A green salad on the side makes a great meal.
