Directions:
Combine milk, yeast and honey in large bowl. Let stand in warm place 10 minutes or until mixture foams slightly. Stir in 1 cup flour. Cover bowl with clean dish towel and let stand in warm place to rise 30 minutes. Stir in enough remaining flour to create kneadable dough. Turn out onto lightly floured surface and knead 5 to 8 minutes or until elastic. Place dough in clean, lightly oiled bowl. Cover with clean dish towel and let rise 1 hour in warm place. Meanwhile, combine walnuts, raisins, 1/3 cup maple syrup, orange juice, cinnamon, orange peel and cardamom in small bowl. Spread walnut mixture in bottom of lightly oiled, 9-by-13-inch baking dish. Set aside. Flatten dough and roll into large rectangle. Starting with short side, roll into cylinder. Slice evenly into 8 pieces. Place rolls, cut side up, in baking dish, with sides touching. (At this stage, rolls can be covered with plastic wrap and refrigerated up to 8 hours.) Heat butter and remaining 2 tablespoons maple syrup in small saucepan over medium heat until butter melts. Drizzle over tops of rolls. Bake at 350 degrees 25 to 30 minutes or until lightly browned. percent calories from fat); 8 mg cholesterol; 45 mg sodium; 53.6 g carbohydrates. Makes 8 rolls.
