I like to put in half a chopped onion towards the last fifteen minutes or cooking, add extra pepper, and melt cheese in each bowl just before serving. The heat of the hot peas will melt the cheese quickly...or microwave, if needed.

Ingredients

  • 3 lbs black-eyed peas in the pod
  • 1 tsp salt
  • 1-1/2 quarts boiling water
  • 1 (1/4-lb) piece lean bacon, cut in large chunks
  • 1/8 tsp pepper

Directions

Shell peas, place in a saucepan, add salt, water, and bacon, cover, and boil slowly 1-1/2 hrs or until of desired tenderness. Check pot ocassionallyand add more water if needed. Season with pepper, taste for salt. Serve peas and "pot likker" (the liquid in the pot) in small bowls.


About 415 calories per serving.
