• 1 cup dark brown sugar
  • 1 tsp vanilla
  • 2 jars(4 1/2 oz. size) strained carrot baby food
  • 1/2 tsp cinnamon
  • 1 1/2 cups flour
  • 1/2 cup raisins (optional)
  • 1 egg
  • 1/2 cup oil
  • 1/2 tsp soda
  • 1 tsp baing powder
  • 1/8 tsp nutmeg1/2 cup chopped walnuts(optional)
  • 2 carrots grated
  • For the frosting:
  • 4 oz cream cheese
  • 1 stick butter or margarine
  • 1 tsp vanilla
  • confectioners sugar


Mix and blend well sugar, egg, vanilla, oil, grated carrots and baby food. Add baking soda, baking powder, cinnamon, nutmeg, and flour. Mix thoroughly. Fold in nuts and raisins. Pour into a well greased 9x5 loaf pan.

Bake at 350 oven for more or less 60 minutes. Cool cake in pan for 10 minutes and then remove to rack to cool completely. Frost with cream cheese frosting.

Cream cheese frosting:
Beat cheese, butter or margarine and vanilla Add sugar(ammount will depend of consistency desired) and continue beating until fluffy.
