Shepherd's Pie Recipe

  Scottish Lamb

    




Ingredients:
1 - 1-1/2 lbs. ground lamb
1 medium yellow onion, sliced thinly
1 - 1-1/2 cups mashed potatoes
1/2 cup diced cooked carrots
1 cup brown stock or
prepared onion gravy)
2 tbsps melted butter
salt and pepper to taste

Directions:
Brown onions thoroughly in large skillet or stock pot. Add ground lamb, cook until browned, stirring frequently. Add stock or gravy, make fairly moist to allow absorbtion when baking. Season to taste. Layer carrots, lamb, potatoes from bottom of deep, 5-quart casserole dish. Drizzle melted butter on top. Bake in preheated 350F (180C) oven. Serve after 40 - 45 minutes or when potatoes form browned, crispy crust.

Serves: Serves 2 - 4.
