Ingredients

  • 1 1/2 C white cornmeal
  • 1/2 C flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp salt
  • 1 1/2 tbsp hot sauce
  • 1/4 C minced onions
  • 1 C grated sharp cheddar cheese
  • 2 eggs
  • 1/2 C buttermilk
  • 1/2 C water
  • Creole seasoning

Directions

Preheat the fryer. In a mixing bowl, combine the cornmeal, flour, baking powder, baking soda, salt, onions and cheese. Mix together. Stir in the eggs, buttermilk, water and hot sauce. Mix until fully incorporated. Fry one tbsp of the batter at a time. Fry for 2-3 minutes or until golden brown. Stirring constantly will ensure even browning. Remove from the oil and drain on a paper plate. Season with Creole seasoning.
