Shepherd's Pie Recipe

Ingredients:
1 pound lean ground beef
1 small onion, chopped
1 can cream of mushroom soup
1 10 oz.package frozen mixed vegetables
3-4 cups mashed potatoes,(leftover good)
Salt and Pepper to taste
grated cheddar cheese

Directions:
Cook ground beef and onion in large skillet until meat is done. Stir in soup, salt and pepper. Place in 1 1/2 quart casserole. Sprinkle in vegetables and top with mashed potatoes then grated cheese. Bake, uncovered, at 350 degrees for about 30 minutes when potatoes start to brown lightly.

Easy and delicious meal in one dish. Can be made ahead and frozen. Let thaw in refrigerator overnight, then bake 45 minutes at 350 degrees.
