Carrot Soup Recipe

Ingredients:
1 onion, chopped
1 lb carrots, chopped
3 tbl sp olive oil
1 can tomato juice
water
1 tbl sp dried or 1/4 cup fresh basil

Directions:
Heat olive oil in a large pan over a high heat. Cook onions and garlic for a couple of minutes. Add carrots and cook for a further couple of minutes.

Add basil and water to cover carrots. Simmer for 20 minutes.

Blend, return to pan, add tomato juice, and reheat.

Makes 2 pt.
