Ingredients:

  • For the biscuits:
  • 2 1/4 cups self-rising flour
  • 3/4 cup shortening
  • 1 cup milk
  • For the gravy:
  • 1 pound ground pork sausage
  • 1/4 cup chopped onion
  • garlic powder to taste
  • 1 teaspoon dried parsley to taste
  • salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 1 cup milk as needed

Directions:
For the biscuits:
Combine and mix ingredients together. Pour out on floured waxed paper. Pat the dough out with your hands until dough is not sticky (add a little flour if necessary). Fold double. Cut biscuits with a biscuit cutter.
Bake on a cookie sheet at 425* F (220* C) for 20-25 minutes.

For the gravy:
In a large skillet over medium high heat, combine the sausage and onion and saute for 5 to 10 minutes, or until sausage is browned. Season with garlic powder, parsley and salt and pepper to taste. Add enough flour to just make the meat somewhat sticky. Then stir in milk until mixture is to desired consistency. Allow to heat through and serve.

Makes 1 dozen biscuits.
