Directions:
Preheat oven to 425 degrees. Melt butter in a saucepan. Mix together flour, salt, mustard and pepper and stir into melted butter until smooth. Gradually add milk and onion. Bring to a simmer. Cook and stir constantly for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8" pie dish (or 8" square or 11" x 7" x 2" baking dish). On a floured surface, roll pastry to fit top of dish; place over filling. Seal and flute edges; cut slits in the top. Bake for about 25 minutes or until crust is golden brown and filling is bubbly. Yield: 6 servings.
To freeze: Freeze after baking. Reheat in a 350 oven until hot. If crust begins to brown during reheating, cover with foil.
