Blush (Beet) Cake with Cream Cheese Recipe

Ingredients:

  • Cake:
  • 1 1/4 c. flour
  • 1 c. sugar
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/2 c. grated cooked red beets
  • 1 1/2 teaspoons honey
  • 1 teaspoon vanilla
  • 1/4 c. plus tablespoons butter or marg melted
  • 1/4 c. milk
  • Frosting:
  • 1 (3 oz) pkg cream cheese
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • 2 1/2 c. confectioners sugar

Directions:
Combine flour, sugar, cocoa and baking powder and set aside. With an electric mixer beat eggs, beets, honey, vanilla, butter and milk. Add dry ingredients to egg mixture and beat on medium speed for 2 minutes. Pour into greased 8 inch square pan and bake at 350 degrees for about 40 minutes. When cake has cooled completely, spread on frosting.

Frosting: Blend cream cheese, milk and vanilla. Gradually add confectioners sugar. Beat until smooth
