Ingredients

  • 2 lbs. pork tenderloin
  • 1/2 cup salad oil
  • 1 qt. button mushrooms
  • 1 sweet green pepper, cut in eights
  • 1 large onion, sliced
  • 1 #2 can tomatoes
  • salt and pepper

Directions

Brown the tenderloin in oil over high heat on both sides. Remove from pan and transfer to large saucepan. Saute' mushrooms and peppers in same oil as tenderloin until soft, add tomatoes and simmer 5 minutes. Pour this sauce over the tenderloin, season with salt and pepper, cover pan, and cook slowly over low heat until the pork and vegetables are tender, about 30 minutes (or until juices run clear). Serve hot. Makes 6 servings.
