I've made this with a 3 lb. Top round, a cut of meat here that's labeled as London Broil and it was delicious, but need to cook about 14 minutes per side. I did use some meat tenderizer as well in the last 30 minutes of marinating.
- < c. firmly packed light brown sugar
- 1/4 tsp. fresh ground pepper
- 1 c. soy sauce
- 2 tbsp. sesame oil
- 1 tbsp. minced fresh ginger
- 2 garlic cloves, minced
- 2 (1 lb.) flank steaks, trimmed
- 1 tbsp. butter or margarine
- 1 lb. fresh mushrooms, sliced
Combine first 6 ingredients in a shallow dish or large zip-type bag & add steaks. Cover or seal & chill 3-6 hours, turning occasionally. Remove steak from marinade, discarding marinade. Grill, covered with lid, over medium-high heat 10 minutes on each side or to desired degree of doneness. Melt butter in large skillet over medium heat; add mushrooms & sauti until liquid evaporates. Cut steak diagonally across the grain into thin strips. Serve with mushrooms. Makes 6 servings.

Flank Steak with Mushrooms (London Broil)
