Ingredients:

  • 1/3 cup salad oil or olive oil
  • 2 small onions,thinly sliced
  • 2 small green peppers,thinly sliced
  • 1 or 2 cloves garlic,minced
  • 1 medium eggplant,unpeeled,small cubes
  • 2 medium zucchini,unpeeled,thinly sliced
  • 2 tomatoes,thinly sliced
  • salt and oregano to taste

Directions:
Heat oil in large skillet or heavy saucepan. Saute onions,peppers & garlic over low heat until vegetables are
limp. Remove from pan & set aside. Add eggplant & zucchini
to pan,saute & keep stirring until slightly softened. Add
tomatoes,salt,oregano & reserved vegetables,cover & simmer
for about 30 minutes. Stir occasionally. Serve hot or cold
serves 6
