Ingredients

  • 400g sweet short pastry
  • 500g Tararua cream cheese (not spreadable cream cheese)
  • 225g or 1 1/8 cups castor sugar
  • 1 1/2 tbs plain flour
  • Juice from 2 oranges
  • 1 tbs orange zest
  • 2 eggs and 1 yolk

Directions

Preheat the oven to fanbake 160 C.
Butter a 20cm spring form tin and line with rolled out sweet pastry.
In a mixer place the cream cheese, castor sugar and blend until lump free, add flour, juice and zest, eggs and yolk.
Spoon into the prepared tin lined with pastry and bake on the middle shelf for approximately 40 minutes or until firm in the centre.
This is delicious served with softly whipped cream or crhme fraiche and a little orange curd or orange juice mixed together and a dusting of orange zest.
