Cheesy Grits Recipe

Ingredients:

  • 2 cups milk
  • 2 cups water
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 cup hominy quick grits
  • 1 1/2 cups shredded Cheddar Cheese (6 oz.)
  • 1/4 cup sliced green onions, with tops
  • 2 eggs, slightly beaten
  • 1 tblsp. butter
  • 1/4 tsp. paprika

Directions:
Heat milk, water, salt and pepper to boiling in 2 quart saucepan. Gradually add grits, stirring constantly; reduce heat. Simmer uncovered, stirring frequently, until thick, about 5 minutes. Stir in cheese and onions. Stir 1 cup of the hot mixture into eggs; stir into remaining hot mixture in saucepan. Pour into greased 1 1/2 quart casserole. Dot with butter; sprinke with paprika. Bake uncovered in 350 degree oven until set, 35 to 40 minutes. Let stand 10 minutes. Immediately refrigerate any remaining grits.

Serves 8.
