Ingredients:

  • 1 - small box lasagna pasta, cooked
  • 1 - small box spinach, chopped & thawed
  • 1 - egg, slightly beaten
  • 1 - small container ricotta or cottage cheese
  • 1 - 8 oz. bag shredded Mozzorrella
  • 1 - 16 oz. can of prepared spag. sauce

Directions:
Mix the egg, ricotta, and spinach (that has been drained really well first) together. Layer a couple of tablespoons spaghetti sauce in the bottom of a 13x9x2" pan. Place a layer of cooked pasta on top. Add a layer of egg mixture over evenly (about 4 TBLS.'s). Add a handful of moz. cheese evenly. Add more spag. sauce. Repeat these layers till you end up with a layer of pasta on top. Add the rest of the spag. sauce. Top with a good layer of Moz. cheese. Bake, covered with foil, in a 375 degree oven for about 30 minutes. Uncover & bake for another 10 minutes, or till lightly brown.



Needless to say, the spaghetti sauce should be one of the herb/garlic type blends--nothing with meat! Serve with a nice salad and you're set. My sister is vegetarian & loves this meal!
