risotto Recipe

  Italian Rice

    




Ingredients:
2 T unsalted butter
1 T olive oil
1/2 cup minced yellow onion
1 cup arborio rice
3 cups chicken broth
2 t. kosher salt
freshly ground black pepper
freshly grated Paremesan cheese

Directions:
Heat butter and oil in 11" x 8 1/2" dish, uncovered at 100% for 2 minutes. Add onion and stir to coat. Cook, uncovered at 100% 2 minutes. Add rice and stir to coat. Cook, uncovered at 100% 4 minutes. Stir in broth. Cook, uncovered 100% for 9 minutes. Stir well and cook another 9 minutes. Remove from oven and let stand 5 minutes. Stir in salt, pepper and cheese.

This recipe will spoil you for ever going back to the pour and stir method. The texture is a bit different but we love this version and the beauty of it is that you can include it in a menu that has other last minute preparation since this cooks itself. We have it often - it's addictive. The times are for a large microwave, if you have a smaller one you may have to increase the times by a couple of minutes. You can mess around with this one adding other ing. like spinach.
