Potato & Leek Soup Recipe

  British Soup

    




Ingredients:
2 oz butter
3 large leeks, sliced white parts
l onion, chopped
8 oz potatoes, slice or cubed
2 pints chicken stock
salt and pepper
2 teasp chopped parsley

Directions:
Melt butter and cook leeks and onion till soft, but not brown. Add potatoes, stock and seasoning, bring to a boil, lower temperature and simmer for 30 mins. Stir in chopped parsley.

Good served with crusty french bread.
