Potato & Leek Soup Recipe

Ingredients:

  • 2 oz butter
  • 3 large leeks, sliced white parts
  • l onion, chopped
  • 8 oz potatoes, slice or cubed
  • 2 pints chicken stock
  • salt and pepper
  • 2 teasp chopped parsley

Directions:
Melt butter and cook leeks and onion till soft, but not brown. Add potatoes, stock and seasoning, bring to a boil, lower temperature and simmer for 30 mins. Stir in chopped parsley.



Good served with crusty french bread.
